Breakfast Dishes
Soft
barley cereal
Barley benefits the gallbladder and liver, and is very easily to digest.
It builds the blood and yin fluids and moistens dryness.
Ingredients...
1 cup hulled barley, washed and soaked overnight
1 1/2 inch long kombu, soaked and diced
3 shiitake mushrooms, soaked, de- stemmed and sliced
1/2 cup diced carrots
1/4 cup diced celery
1/4 cup diced onions
1/4 cup chopped scallions
barley miso,
5 cups water
Preparation...
Place barley and water in a pressure cooker, add kombu, shiitake mushrooms,
carrots and onions.
Place on a high flame, bring up to a pressure. Reduce flame and simmer
for 50 to 60 minutes.
Add miso diluted in a little water, simmer for a few minutes, garnish
with scallions.

Oats With Vegetables
Oats strengthen the spleen and pancreas and restores the nervous system.
One of the richest silicon foods, oats help renew the bones and connective
tissue.
Ingredients...
1 cup dried whole oat groats
3 1/2 cups water
1 onion, diced
1/2 cup diced squash, carrot, daikon
parsley or cilantro, finely cut
1 teaspoon rice miso
Preparation...
Wash , drain oats and roast in a hot, dry skillet until golden, or soak
oats over night.
Boil water and add oats and vegetables. Return to a boil and simmer for
1 hour and about 15 minutes.
Dilute miso in a little water, stir in and simmer for 5 minutes. Garnish
with greens.
Gingered
Kale
The liver loves greens!
The water leftover from cooking the greens is very nutritious and delicious
if you add a bit of lemon juice or umeboshi vinegar.
Ingredients...
5 cups kale, tough stems removed, washed and sliced
3 cups water
4 thin slices fresh ginger
lemon
Preparation...
Bring the water to a boil in a 4- quart soup pot together with the ginger
slices.
Add the greens, simmer, uncovered about 10 – 15 minutes, using a
wooden spoon to push the greens under the water.
When done, fish out the greens and place them in a colander to drain.
