Recipes for Health and Healing - Whole Grain Dishes


Basic Boiled Brown Rice

Ingredients...

1 cup brown rice, washed
2 cups water
pinch of sea salt or stamp sized kombu
preparation
Place the rice and sea salt, or kombu ) in a pot. Cover with a lid.
Bring to a boil on a high flame
Reduce the flame to medium- low and simmer for approximately 50 minutes.
Remove with a wooden rice paddle and place in a serving dish.

 

Boiled Barley
Barley is an ancient grain and traditional staple of Southern Europe, North Africa and the Middle East. It produces a light, cooling effect and is especially beneficial for the liver and gallbladder.

Ingredients...

2 cups barley, washed and soaked overnight or at least 4 hours
4 to 4 1/2 cups water
pinch of salt or kombu
preparation
Place barley, water and sea salt or kombu in a heavy pot. Cover and bring to a boil over a high flame. Reduce to medium – low flame and simmer for 1 1/4 hour.
